So many snack bars, granola bars and cereal bars are being marketed as healthy snack options these days. But one quick glance at the label and you realise they are not as healthy as you think. Some are loaded with sugar, others are packed with artificial preservatives and E-numbers. So how can you guarantee you are grabbing a healthy option when you need to run out the door??

2 1/2 cup Rolled Oats
1/2 cup Chopped Walnuts
1/2 cup Chopped Almonds
3/4 cup Ground Flaxseed
1/4 cup Pumpkin Seeds
1/2 cup Honey
1/4 cup Stevia or Xylitol
4 Tbsp Extra Virgin Coconut Oil
2 tsp Vanilla Extract
1 cup Unsweetened Dried Cranberries
1/2 c Unsweetened Dried Shredded Coconut
1 tsp Cinnamon
1/2 tsp Sea Salt
Preheat oven to 325 degrees F. Combine oats, almonds,walnuts, flaxseed and pumpkin seeds in a large bowl. Spread on a large baking sheet and put in the oven for approximately 20=25 minutes to toast. Stir occasionally to make sure they don't burn.
In a small plan, combine honey, stevia or xylitol, coconut oil and vanilla and stir whilst bringing to a boil.
In a large bowl, combine dried cranberries, dried coconut, cinnamon and sea salt. Mix thoroughly.
Once the oat mixture is done toasting, combine with the cranberry coconut mixture.
Add the honey mixture to the dry ingredients and stir until thoroughly mixed together and everything is fully coated.
Line a baking sheet with wax paper and spread the mixture evenly until it is approximately 1/2" thick. Place another piece of wax paper on top so that you can press the mixture into itself, as well as level off the top.
When completely hard, cut into desired size and number of pieces.
